The ingredients needed to make Miso Udon Noodle Hot Pot:
  1. Make ready 800 ml Dashi stock
  2. Prepare 2 tbsp ★Hatcho miso (or red miso)
  3. Make ready 2 tbsp ★Blended miso
  4. Prepare 2 tsp ★Gochujang
  5. Prepare 2 tbsp ★ Sake
  6. Take 2 tbsp ★Mirin
  7. Get 1 knob ★Grated ginger
  8. Get 150 grams Pork belly (thinly sliced)
  9. Make ready 1/8 Chinese cabbage
  10. Make ready 1/4 Daikon radish
  11. Make ready 1/2 Carrot
  12. Prepare 2 Japanese leek
  13. Get 1 packet Maitake mushrooms (enoki or shimeji mushrooms)
  14. Make ready 1/3 Kamaboko
  15. Make ready 2 portions Cooked udon noodles
  16. Get 2 Eggs

One day I felt like eating stewed miso udon. I looked up the Stewed Chicken Breast and Vegetable with misoand arranged a little to make this udon noodle hot pot. Adjust the amount of miso to taste. I used vegetables I had at home.

Instructions to make Miso Udon Noodle Hot Pot:
  1. Cut all the vegetable into bite sizes. Warm the dashi stock in an earthenware pot.
