The ingredients needed to make Puertorican WHITE Rice and Beans:
  1. Get 2 cup white rice
  2. Get 2 can 15 oz pink or red beans with sauce
  3. Take 4 tbsp sofrito (easier to find the Goya brand in freezer aisle)
  4. Make ready 1/4 cup diced onions
  5. Make ready 1 envelope sazon (Spanish seasoning)
  6. Get 1 1/2 tbsp adobo (Spanish season salt)
  7. Prepare 1 tsp salt
  8. Prepare 1 tsp black pepper
  9. Get 1 large potato, quartered
  10. Get 1 can 4 oz tomato sauce
  11. Make ready 5 each spanish green olives with pimento
  12. Make ready 1/2 cup chicken broth or water

Im puertorican and we never make rice with pigeon peas and beans, it just doesn't go together. We make white rice and beans, or any. (in Puerto Rico, it is traditional to serve rice and beans with almost every meal, but mainly with pork chops (cooked with a little sofrito and adobo seasoning) on the side). Enjoy (a wonderful recipe straight from the island). This is my quick version of Puerto Rican style beans, which I make with either pink or red canned beans and diced potatoes, perfect when you need a quick side.

Steps to make Puertorican WHITE Rice and Beans:
  1. Boil rice as directed on package with salt (usually every cup of rice is 2 cups of water). Set aside.
  2. In a medium pan, heat sofrito & onion until onion almost translucent.
  3. Combine rest of ingredients, EXCEPT RICE, & bring to a boil. Then simmer until potatoes are fork tender. About 30 minutes. If needed add a little chicken broth or water to keep saucy.

Enjoy (a wonderful recipe straight from the island). This is my quick version of Puerto Rican style beans, which I make with either pink or red canned beans and diced potatoes, perfect when you need a quick side. We serve it over white rice but it's also great over brown as a side dish to chicken, pork chops or steak. This Puerto Rican-style rice and bean dish is made with a mixture of chicken broth, pigeon peas, sofrito, and seasonings for ultimate flavor.
