The ingredients needed to make Twisted Beef Burritos:
  1. Take 1 1/2 lb ground beef
  2. Make ready 2 burrito size tortillas
  3. Take 4 tbsp guacamole
  4. Take 1 cup salsa
  5. Take 2 tbsp cumin
  6. Prepare 1 tbsp paprika
  7. Take 1 tbsp cayenne pepper
  8. Take 1 tbsp onion powder
  9. Make ready 2 tsp garlic powder
  10. Prepare 1 cup beef stock
  11. Make ready 1 roasted bell pepper; red, yellow, or orange; cut into strips
  12. Take 1 cup shredded cheddar and jack cheeses
  13. Take 1/2 cup white rice
  14. Make ready 1 cup water
  15. Make ready 1/2 cup mole sauce
  16. Make ready 1 salt and pepper
Steps to make Twisted Beef Burritos:
  1. Heat large saute pan. Add beef. No oil. Add dried spices. Saute for approximately 10 minutes or until beef is fully browned. Drain.
  2. To roast bell peppers, toss with minimal oil and roast at 400° until skin is peeling, turning once or twice during cooking.
  3. Return beef to pan. Add stock. Cook until stock has evaporated. Add salsa. Cook until salsa is almost evaporated.
  4. Cook white rice according to package directions. Toss with mole sauce.
  5. Layer the burrito shell in this order. Guacamole, beef, rice, bell peppers, and cheese. Roll and serve!
  6. Variations; Add pinto or black bean puree or whole, salsa verde, more mole sauce, pico de gallo, roasted tomatoes, spanish rice, mexican rice pilaf, bacon.
