The ingredients needed to make Lemon Salmon with cous cous:
  1. Make ready 2 salmon
  2. Take 1 lemon
  3. Make ready 2 tsp black pepper
  4. Get 2 tsp thyme
  5. Get 1 tsp coriander
  6. Prepare 1/4 chilli pepper - optional
  7. Take 2 portions of cous cous (Mexican flavoured is best)
  8. Get 2 carrots
  9. Get 1/3 cucumber
  10. Get 1/2 cup mixed parsley and chives
Instructions to make Lemon Salmon with cous cous:
  1. Pre heat oven to 180°F
  2. Place both pieces of salmon onto a piece of foil large enough to close into a dome
  3. Squeeze the whole lemon onto the salmon and grate the rine ontop as well
  4. Sprinkle over the coriander, thyme and black pepper.
  5. You can add a small dash of chilli peppers here for extra flavour if you wish
  6. Place into oven for approximately 25 minutes
  7. Whilst the salmon is cooking, cut up your cucumber, carrots, parsley and chive into tiny pieces and mix in with cous cous
  8. Add the sweetcorn at the last minute
  9. Once the salmon is cooked, take out of oven and dish up the cous cous
  10. Place the cooked salmon ontop of the cous cous and then pour the lemon juice from the foil all over the meal - this will give it a fresh taste and calm the flavours down
  11. Sit down and enjoy :)
