The ingredients needed to make Loaded Mashed Potatoes:
  1. Prepare 5 lb Potatoes cut and peeled (you can leave skins on if desired)
  2. Prepare 1 cup Sour Cream
  3. Get 1/2 cup Milk
  4. Prepare 4 tbsp Butter
  5. Prepare 1/2 lb Bacon cooked and crumbled (you can also use about 5 oz. bacon bits if you are looking for simplicity)
  6. Take 3 Green Onions finely chopped
  7. Make ready 3 cup shredded cheddar cheese (I like to use sharp cheddar)
  8. Make ready 1 Salt and Pepper to taste ( I like to use a lot of both!)
Instructions to make Loaded Mashed Potatoes:
  1. Once the potatoes are chopped into like size pieces and peeled as desired, place in cold water and bring to boil. After about 10 minutes of boiling use a fork or knife to check if the potatoes are tender.
  2. Drain potatoes and place in a large mixing bowl.
  3. Add sour cream, milk, and butter to the potatoes . Mix with an electric mixer until potatoes are smooth and creamy.
  4. Stir in chopped chives, 2 cups of cheese, and bacon. Add salt and pepper.
  5. Layer the potato mixture in a 3 qt. Baking dish and top with the remaining cheese.
  6. Bake uncovered in the oven for 30 minutes at 350°F.
